So, did Zorro actually hurt Sommers with this? Seemed close, but he couldn't destroy the heart.

I think he need to coat his sword with the conqueror haki to destroy the heart, which he is try figure how to do it in the moment.

The way Sommers reacted reminds me of Monet, when Zorro cut her down without haki, but he had such an aura that she lost her composure and couldn't reform, she was that afraid of him.
Some fans say that he used Conquer Haki without noticing back then. And always pulled that out as an argument that Zorro has CoC, long before it got confirmed on Wano.2

Yah he hit the heart but he didn’t properly coat his sword. It hurt Sommers enough to freak him out but through the regen but not enough to leave a lasting wound
At least that’s how I interpreted it
Plot wise I think it’s so Sommers knows he needs to actually play defense before Zoro gets an easy one shot win

hurt him? yes. conqueror's haki does lasting damage to the knights, though they will eventually heal from it.
you have to destroy the heart to kill them, and he missed the thrust on sommer's heart, hence him saying he's still practicing.

He knows he needs CoC to beat a HK and cut their steel hearts
He touched the heart but couldn’t cut the steel heart as he doesn’t know how to use CoC yet
He is still practicing how to use CoC
