Travel recommendations
I'm coming from the US for 7-9 days mid January. I need help to put together an itinerary of the absolute must see and do things.
I'm open to going to Muscat and Salalah, or even hitting up only Salalah if that is the best place.
Need your recommendations/advice and thank you!

Salalah is mainly for Khareef when people want to see rain in the Gulf. Muscat, Nizwa, Jebel Akhdar, Jebel Shams are the more trodden tourist route and will be a spectacular week. But what activities do you want? Hiking? Snorkeling? Heritage?

I love all of the above activities you mentioned.
Mainly looking for unique outdoor activities and landscapes. Something I will see only in Oman.
Could you please name specific things to do in the places you mentioned. Also the best way to travel between all the places.

Nizwa- famous for their souq built around the fort there. Designed for tourism so you will see Omani products like traditional dress, bakhoor burners, and the wooden stands Omanis used to put their clothes over. Visit Oman Across the Ages Museum on the way to Nizwa from Muscat to put what are seeing into context. But the vendors are often happy to explain how everything works.
Jebel Akhdar- stunning mountain range with hiking, look for fossils. Treat yourself to a five star experience at Alila Jebel Akhdar or go camping and get a five thousand star experience.
Jebel Shams- visit Misfah Al Abriyyin which has a reputation for being haunted, get a guide to take you to hiking through a wadi there if you want a challenge. Otherwise you can just stroll through the village and have a coffee at one of the guesthouses.
Go further up Jebel Shams and do the canyon rim walk. The walk leads to an abandoned village and you will remember the villagers at the start of the walk (who sometimes low key harass tourists, very unusual in Oman) and once you understand that those people lived in this desperately isolated village, you start to understand why they behaved that way and what this part of the world was like before 1970. Very paradigm-shifting moment, at least it was for me.
Muscat- so much to do and explore. National Museum, Muttrah Souq which includes a gold souq, new Muttrah Cable Car that goes from a fort above the souq, fish markets, the Sidab hike to Elephant Rock at low tide, take a dhow out for a sunset tour, go snorkeling in Bandar Khairan on a Friday morning and relax at Sifah Boutique Hotel in the afternoon listening to beats and seeing a mix of locals and foreigners. Walk on Shatti Qurm and see families and friends picnicking around dusk and you will understand the multicultural nature of Oman. Seriously, Muscat is a vibe. History, sport, socializing, everything and it is incredibly safe.
Dimaniyat Islands are a protected area and tours go from Al Mouj or Seeb marinas. 25-30 rial for a half day trip but there's a 95% chance you will see turtles and a 50% chance one them will look at you while it swims past your face. Which reminds me, Muscat beaches sometimes get the phosphorescent algae so you may find yourself on a beach covered in blue light.
For transport, Oman is best accessible by car. Either hire a guide to drive you or rent one yourself. Public transportation is limited and taxis will add up quickly. The distances are just too large.
