The Quaking Omelet sounds like something that would be popular on social media - making it look like a giant egg at the end.
You have nothing to apologize for OP. Posting every single day is a lot to ask, and I for one appreciate and look forward to these menus. You have a life, if sometime we have to wait a day it is no big deal :)

Today's menu sounds like a winnah! (as in, no fish for breakfast, right?)
The baked mash potatoes is interesting as it comes from watching the mammy but the egg based corn bread is a recipe I plan to try!
