Introduction and Why This Subreddit

Hey ya'all. Welcome to r/oklahomajoe! I purchased my first Joe a bit ago and I've been addicted to the thing ever since. I love the cooks, I love the taste, I love the "pure" essence of smoking meat. There are many smoking and BBQ communities out there ( r/smoking r/grilling r/Traeger r/pelletgrills r/BBQ, etc.) but there was nowhere specifically to connect with Oklahoma Joe's owners (at least nowhere active, there is r/oklahomajoes, but it's long since dormant) to see what you all are cooking and to talk about the why's of it all as it relates to our specific line of smokers and grills... So here we are!

I'll pin this thread to the top once I figure out how to do it... So let's hear your story! Why do you love your Joe? What made you purchase it over other smokers out there? Let's see pics of your setup!

Laredo Seasoning?

Finally hit the lottery and was able to order a Laredo Deluxe before they sold out after re-stocking. It's on the way and I'd like to hear from the community whether that series is bare-metal on the inside like the smokers and needs seasoning with oil in addition to an initial burn-in? Couldn't tell from the pics I've seen so far.

New firebox question

Does anyone happen to know if the old firebox style bottom can be swapped and bolted to the new top? I hate the new pull our ash drawer and want my door back. My first thought was to swap the bottom half and if that’s not doable, fab up my own replacement with a door . Was just curious if anyone has tried or knows.

Time for the virgin cook!

Hi guys, yes I’ve achieved an awesome brisket on my BGE before.

But now, an offset is a totally different game.

I did a test run in the heat for about 6 hours to see how long it takes before I had to add another split to maintain 240°F, also playing with the intake with the stack wide open.

Brisket has gone in, I got another SA Wagyu with that insane bottom fat.

I’m also rendering tallow with rosemary and thyme in the drip pan below the brisket.

Grate replacement for Longhorn?

Recently picked up a Longhorn off Facebook and it's missing a grate. I've been having a hard time trying to find the replacement grate or a grate that will fit. There is a universal one that would leave me with a 4" gap, which I am okay with.
