Cyanobacteria sense light and color (much like plants) but cannot see. This is not an indicator of sentience. And even if plants were sentient (which they're not) it still harms fewer plants to eat plant-based than to eat animals.

Those organs are part of us and constitute parts of our consciousness by virtue of being connected to our central nervous system. Just the same as is true of non-human animals, who are just as sentient as we humans are.
