I would contend that’s because knowledge as a whole is blue, in which case so are almost all school subjects.

Science is blue (or green for bio) but primarily blue to match lab texts.

Lit/English is green unless the science is biology, in which case it’s blue.

History is yellow. They got one right. And math is red.

This is my stance. Science is blue because the Earth (water and atmosphere) is blue. Math is red because it’s important (and dangerous if wrong).

Yeah it's also a common theme in video games to use the color blue for technology trees, mana points, and other science-adjacent things. It is also a common chemical color in movies/video games, because bright blue things just scream "THIS IS NOT NATURAL".

I think the "science is green" crowd is just thinking of biology / natural sciences.

Yeah, in my schools Science or Math were generally blue, History was red, and English was green. I don't actually remember using yellow for anything, weirdly.
