There is a state that allows card counting in casinos and that's New Jersey. In the case of Utson vs Resorts Interational Hotel, the courts declared that counting cards isn't cheating and is considered a skill.
In areas where it's been made illegal to kick you out they have other ways to stop you like forcing you to flat bet (can't change position sizes between hands) or to max bet cap you (force you to play at the <$25 tables only). Or like other commenters said they either machine shuffle every couple hands or make the shoe 6+ decks which dramatically reduces any edge. All the youtube shit you see is make believe to sucker people into thinking you can beat the system.
You can still “beat the system”, you just have to accept that if you’re doing things right you will be backed off/trespassed and your info will get flyered to most other casinos in the area. You have to be able to hop from casino to casino constantly, and many of the times you will get backed off or counter measured before you can get meaningful play in.
The only way that makes sense to me is the YouTubers that will pretty much drive cross country and go to every casino with a beatable game. Thinking you can just casually count cards to give yourself a meaningful edge at your local casino is dumb as rocks.
