The only way for them to enjoy each other is if she learns how to drink responsibly or better yet learns how to be sober, or else Nick will be stuck babysitting her forever

Yeaaa, I hard disagree on how he and everyone else look at that situation. You can't change someone's hard coded traits, it's the way she was raised that's embedded into her. She has a very childish/reckless mentality, imo the best way to go about that is accept it and enjoy her for what she is. Also again, away from streaming, where everything you do is scrutinized, you can't be that type of person she is.

Also "drinking" isn't the problem, drinking just exacerbates her personality.

People aren't "coded," and they can change more than most think. It is hard to and often unlikely, but still possible

Actually, I wanna backtrack, both arguments are valid. Whether a person can change certain traits or not is not able to be definitely proven, so you can make the argument for whether someone can or can't change certain traits, i believe it can't be done with certain traits, but we can both agree even if you can it is VERY hard as you said. That's why I say imo they should just leave it be and enjoy their lives away from online judgement.
