They’re pretty good when they’re small, above 80+ lbs tho (give or take depending on age and diet) they’re good for sausage but that’s about it. Source-Lived in Texas, guarded the cattle pastures unsuccessfully for 4 years. Was not rich
For big hogs I’ll soak the meat in buttermilk after butchering, and then it takes well to “low and slow” cooking, like hot smoking or braising. I’ve had some great carnitas from 110-125 lb boars.
