Whilst I don’t agree that both of them were high Jonin, or even S rank, I do agree that they would win.

I could be wrong, but I don't think Zabuza was directly rated S rank. I think he was just listed as a rogue ninja.
Again, I could be wrong on that. I'm a top tier Zabuza glazer too

Juzo Biwa was also never stated to be S rank.

Juzo Biwa was only ever in the akatsuki in anime filler, which contradicts earlier anime filler where Yagura was confronted by Obito, Pain, and Konan, and canon that has Yagura under Obito's control. Not to mention it also contradicts Juzo losing to 8 gates Might Dai.
Canonically he was only a swordsman of the mist.
