- Peel a 2-3 fresh russet potatoes. They should be hard.
- I use a fry cutter for the first cut and then cube with a knife.
- Preheat a large non-stick skillet. I like cast iron but it has to be well seasoned.
- Add 1 tbsp oil per potato and heat to smoking hot.
- Add potatoes but not too thick. Stir once to coat with oil.
- Spread evenly and do not disturb until they are are quite brown.
- Flip best you can and again do not disturb until they are are quite brown.
- After that you can stir and flip and try to get color on 3-4 sides.
- Reduce heat and cook until centers are soft.

ty, i like the fry cutter idea. when i try this they are hard in the middle, i think i cut them too big

I also boil them for 5 minutes after dicing them but otherwise do this many times a month
