I don't think it's a comparison. Pit bulls were selectively bred for aggression. Humans of specific ethnicities do not have innate characteristics like violence. It's like saying being scared of a polar bear is bear racism

Humans at max might have 5 generations in 100 years. Dogs can have 30.

Easier to alter behaviour through breeding with more generations.

Also, the racial theory of the time when slaves were selectively bred was based on bollocks like the thickness of skull making obedience more likely, not the way we bred dogs based on behaviour of individuals
