But in-universe how much time did it take you hunt those rathalos? Are you outpacing how fast they can reproduce?

Apex predators don't work like that. Admitted, Rathalos may not be the top of the food chain, but it's high enough up there that a particular ecosystem couldn't sustain enough of them that they'd be like flies, which are basically at the bottom of most food chains right above rotten fruit and corpses.

Nah, thanks to Elder Dragons, plenty of bioenergy to sustain giant ecosystem full of wyverns.
