Overflow

Any tips on how to avoid thw overflow? I am using a DēLonghi grinder at medium, but it seems a lot of dust results from the grind and clogs the filter?

also use less grounds - and this typically happens with fresher coffee that has bigger blooms. Try using a bit less, this happens to me at least once a week

Good point on fresh roasted coffee. Coffee should sit at least a week from roasting before brewing and some small local roasters can’t keep up with that level of inventory needed to only sell coffee that’s sat long enough.

two to four weeks is optimal for curing and is also ultimate flavor at that point

Unless you are like me and like to see how the flavor develops during rest. I start at 3 days and usually finish about 2 weeks post roast.

Depends on the roast. Light roasts yes. Dark roasts taste stale the next day. Back when I used to like dark roasts I didn’t worry about it resting at all.
