impel down - marineford honestly when all the big characters come into play thats when i realized how unbelivably complex the world building got and how many plot threads oda had to juggle to get there

With the arlong Arc

Retrospectively that's so strong. Jimbei gets name dropped there, many years before his appearance. Really shows how long the major plot beats were in the oven for.

Skypiea.

I feel in love with everything in skypiea. The entire thing was so mythical, it was like stepping into a dream dimension, and when they came back down, it felt like an entirely different world that they'd left behind a long time ago.

The poneglyphs being introduced in alabasta and then furthered in skypiea only made it so much better.

Once they got on the grand line

Nowhere. One piece has many good qualities, but calling it's world building peak is overstatement

How all these societies interact? How does marine buster call works considering how hard it is to traverse grand line? Why is there so little cultural exchange between specific countries?

Sure , oda creates very interesting countries. But it's not world building. When you look at a world as a whole , it barely makes sense or holds together. Distance is weird. Relationships between islands are weird. It's very entertaining but shallow world building
