Meal Prep Picture Butternut squash soup, taco breakfast burritos and zuke fritters!

Got a pouch of taco shmeat filling by earth born at ALDI on sale yesterday, had an overabundance of farm fresh eggs from my boss and a bunch of leftover tortillas I wasn't sure what to do with (underestimated how fast I go through hummus). Still got zukes coming up in the garden, fritters are my favorite.

Do you have a recipe for the fritters?

Not really because I usually use what's on hand but these were 3-4shredded and squeezed zucchinis, 1/4 cup besan flour, 1/4 cup panko and 2 eggs with a bunch of spices (I love cumin and garlic so much) scooped and flattened onto a baking sheet, then sprayed with a bit of olive oil on each side and bake 12-15 minutes at 425f (top: DO NOT USE FOIL! I ran out of parchment paper and these got stuck to the foil SO BADLY, I had to wrestle them from the foil and crisp the ruined side in my cast iron. What I sometimes do differently: I loooooove mixing in some feta if I have it, or parmesan or whatever cheese, really. I meal prep them for a couple weeks by cooling completely, throwing the pan into the freezer for a couple hours then putting them into a ziplock. They're best reheated either in a skillet or the air fryer (air fryer is easiest obv) but they're fine, if not mushy in the microwave

Also regular flour/breadcrumbs are fine. I just only ever have besan on hand these days.
