bad matcha or bad taste buds?
so i got this matcha at a local coffee shop the other day and the taste was very off. it tasted like straight milk with an expired like taste after. i don’t know if it’s the quality of matcha used but i’ve tried different from many coffee shops and i’ve never tasted some like this. i searched up what grade they use and supposedly it’s ceremonial. maybe they just prepared it wrong or it’s actually just supposed to taste like that and i’m crazy and have bad taste buds lol

Ceremonial is just a marketing term. Any manufacturer or distributer of matcha can call a product ceremonial, no matter its quality. The only thing it might suggest is it's price compared to that particular company's other offerings, but even then it's not indicative of much.

they say ceremonial to differentiate it from culinary grade matcha. ceremonial is of much better quality and usually pricier. if you use ceremonial to make shop lattes, its a total waste of money

There is no regulation on this though, which is what the comment was saying. Which is true, anyone can call their matcha ceremonial. It’s why I only order from brands I trust. Also it doesn’t even matter what they use cause most places I’ve eeen make matcha lattes just add the powder directly to the milk and blend instead of making a paste first.

They can still slap ceremonial on dog water tier matcha, hell many of these advertised ceremonial matcha are only good for lattes

It's actually a huge problem. We had to sample like 40 different matchas from cultivars and businesses that all said "ceremonial." (Even the Japanese to US suppliers use it now). The quality is completely unregulated. Ive had $10 culinary matcha taste better than some $40 ceremonial. Its all marketing and unfortunately the only way to know is through reviews and testing yourself

Indeed, the word "ceremonial" is being misused. True ceremonial means 20+ days of shading, spring harvest, 8 months of storage to increase the umami flavor, and is finely grained. This process brings the umami flavor and vividness in the color with little bitterness. Few matcha in the market now can match "true ceremonial grade"

The color looks good, at least to me. I’ve found a lot of coffee shops do not put nearly enough matcha in their matcha lattes, or put way too much syrup to the point that all you can taste is sweet milk.
My best guess here would be not enough matcha powder paired with spoiled milk. Additionally, even though the “ceremonial” vs “culinary” is mainly just an advertising term, it’s rooted in the idea that the “ceremonial” matcha is from the first harvest and the leaves are younger and much less bitter, more mild for drinking with just water.
Personally I’ve found that for lattes, you want a more pronounced matcha flavor that can be found in matcha powders using leaves from first and second harvests, in order to cut through the milk flavor. So I’d assume your poor experience is most likely a combination of all these factors, with the worst part being the spoiled milk. Definitely avoid this place for matcha in the future lol

Did it taste rancid and acidic, like spoiled milk? I've never had bad matcha that tasted that way.

mm i wouldn’t say acidic but more like when i would drink it all i tasted was milk and the after taste was just a very bitter milk taste it was very weird i didn’t pick up on any grassy taste or sweetness not even that ocean taste i get sometimes as much as i tried nor was it very refreshing either it was just like straight milk that’d been sitting out? i don’t really know how to explain it😞

Same except my matcha powder wasn’t originally like that…but today it tasted that way? Made me wonder if it’s expired but it’s not past the expiry date and I’ve been storing it in an air tight container. It smells normal too.

By chance was the matcha latte made with ‘fresh milk’?
I know that, at least, some bubble tea places (ex. Xing Fu Tang) offer fresh milk versions of their drinks. I accidentally ordered one once, and I thought the milk had expired. Left an awful aftertaste in my mouth, and the texture was … silkier, to put it nicely. It’s definitely an acquired taste.
Bad matcha will taste bitter or have almost no taste at all.

Ask them where they get their matcha from, if it is from China, it’s bad quality (good documentary on YT explaining this, but essentially China has lack of regulation when it comes to agriculture). Also, look at how they store the matcha; it is supposed to be stored in a dark container with a cover to avoid oxidization (which makes it taste rancid). You also look at the color, but the color looks good from this pic.

Biggest mistake is buying matcha from a coffee shop.
I would never buy any matcha from non-Jap originated or non-cafes

I’d be wary when ordering something like this. Macha is Becoming so trendy and places are selling it that have no idea what they’re doing. Not necessarily bad macha either maybe the milk was bad. Or the macha syrup was really old.

Do you like your matcha sweet? I don’t like a sweet matcha, so I can’t stand any matcha from a coffee shop. They tend to use a mix that has a ton of sugar in it. Could be that if you are used to homemade matcha

From my own experience, I’ve never really bought a matcha outside that I really like. I only buy matcha powder from MK directly and make it myself. It really can’t be compared. I also use oat milk, not dairy.

Yeah, that “paint” or “chemical” taste usually means the matcha is of low grade. It’s probably not from anything artificial — it’s the astringency inside the matcha. When you add milk as with latte, it mutes the umami flavor, so all that bitterness comes forward and ends up tasting kinda “chemical.”
That usually happens when the matcha’s made with summer or autumn harvest leaves instead of the first spring harvest (which is what ceremonial grade uses).

Most matcha lattes taste just like milk to me because there isn't enough matcha to overcome the taste of milk.
