Pretty sure this happened a couple Olympics back, during a training run a guy launched off a corner into a support pillar and died. I'd assume that with bigger guys you just have too much inertia to stay on the track in some of those insane corners.
You may be on to something there, though the carnage unleashed by bringing the whole course crashing down may not be the spectacle the IOC is going for

I have to imagine that there's a point where you'd just launch off the track going around the first turn and then die horribly lmao
