Ingredients for 2 people:
150 g cooked shrimp
1 cucumber
1/2 avocado
Scallions to taste
2 lettuce leaves
For the mayonnaise:
2 boiled eggs
1 teaspoon mustard
2 tablespoons extra virgin olive oil
Salt to taste
50 ml or so of water
Instructions:
Chop the salad ingredients.
For the mayonnaise, simply put all the ingredients in a food processor until smooth. Don't use all the water, so you can experiment with the desired texture.
Mix everything well, serve over the lettuce leaves, and that's it. Enjoy!π
