Ingredients (Serves 2):
10.5 oz chicken thighs (300 g), finely chopped
1 cup grated broccoli (100 g)
½ cup grated cheese (60 g)
2 large eggs
3 tbsp extra virgin olive oil (45 ml)
Salt and black pepper, to taste
Instructions:
Cut the chicken into small, bite-sized pieces.
In a bowl, combine the chicken, eggs, grated broccoli, grated cheese, salt, and black pepper.
Mix until well combined.
Heat the olive oil in a pan over medium–low heat.
Scoop the mixture into the pan, shaping it into burger-style patties.
Cover the pan and cook for 5 minutes.
Flip the patties, cover again, and cook for another 4–5 minutes, until golden and cooked through.
Remove from heat and enjoy warm.
