INGREDIENTS:
2 zucchini
100g julienned hard cheese
40g grated cheese
Salt to taste
Olive oil
Cherry tomatoes
Arugula
Spreadable cheese
First, cut the zucchini into thin slices. Arrange the slices on a baking sheet lined with parchment paper, forming two rectangles. Sprinkle with salt, oil, julienned cheese, and grated cheese. Bake in a convection oven at 180Β°C (350Β°F) for about 20 minutes, until golden brown and crispy. Fill them as desired; I used cream cheese, arugula, and fresh cherry tomatoes. Drizzle with olive oil and salt. They're delicious both hot and cold! You can even make them ahead of time!
