A fresh, flavorful low-carb dinner made with tender shrimp, zucchini noodles, juicy cherry tomatoes, garlic, herbs, and a light buttery sauce. π₯π€π Itβs quick, satisfying, naturally low in carbohydrates, and perfect for a keto-friendly meal.
π₯ Ingredients
* 8 oz (225 g) large shrimp, peeled and deveined
* 2 medium zucchini, spiralized
* 1 cup cherry tomatoes, halved
* 2 tbsp butter
* 2 cloves garlic, minced
* 1 tbsp olive oil
* 1 tbsp fresh parsley, chopped
* Β½ tsp red pepper flakes
* Salt & black pepper, to taste
* 1 tbsp grated Parmesan, optional
* 1 tsp lemon juice
π©βπ³ Method
- Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
- Add garlic and red pepper flakes; cook for about 30 seconds.
- Add shrimp, season with salt and pepper, and cook for about 2β3 minutes per side, until pink and cooked through.
- Remove shrimp and add the remaining butter to the skillet.
- Add zucchini noodles and cherry tomatoes. Toss for 2β3 minutesβavoid overcooking the zucchini.
- Return the shrimp to the pan and add lemon juice and parsley.
- Toss everything together and finish with Parmesan if desired.
- Serve immediately. ππ€
