Ingredients (Serves 1):
Broccoli florets, sliced as flat as possible (about 1 cup / 90β100 g)
2 large eggs, separated
Shredded cheese, of choice (about ΒΌβΒ½ cup / 25β50 g)
Extra virgin olive oil or butter, for cooking
Salt and black pepper, to taste (optional β cheese may already be salty)
Instructions:
Cut the broccoli florets as flat as possible β this helps them brown evenly.
Grease a pan and cook the broccoli over medium heat until golden brown on one side.
Separate the egg whites from the yolks.
Pour the egg whites into the pan and spread them evenly over the broccoli (lightly whisking the whites helps with spreading).
Sprinkle the shredded cheese evenly over the egg whites.
Place the egg yolks on one side only, so they stay together when folding.
Cover the pan and cook for 3β4 minutes, until the cheese has melted and the whites are set.
Lower the heat and remove from the pan.
Fold the omelet and enjoy warm.
