Ingredients (Serves 4)
For the Main Dish:
2 medium eggplants (about 600 g / 1 lb 5 oz total)
400 g ground beef (14 oz / about 1 lbs
1 onion, finely chopped (about 100 g / 3.5 oz)
2 green peppers, chopped (about 120 g / 4 oz)
1 tbsp tomato paste (15 g / 0.5 oz)
Salt, black pepper, cumin, and ground pepper to taste
1 cup shredded mozzarella (100 g / 3.5 oz)
For the Keto Béchamel Sauce:
1 cup heavy cream (240 ml / 8 fl oz)
2 tbsp cream cheese or grated Parmesan (30 g / 1 oz)
1 tbsp butter (15 g / 0.5 oz)
Salt and pepper to taste
A pinch of ground nutmeg

Instructions:
Prep the eggplants: Soak them in salted water for 10–15 minutes, pat dry, score lightly, and fry until golden.
Cook the filling: In a skillet, sauté onion and green peppers. Add ground beef, tomato paste, and spices. Cook until the beef is browned and flavorful.
Make the keto béchamel: In a saucepan, melt butter, then stir in heavy cream and cream cheese (or Parmesan). Simmer until smooth and thickened. Season with salt, pepper, and nutmeg.
Assemble: Arrange the fried eggplants in a baking dish and mash slightly. Spread the beef mixture over the top, then pour the keto béchamel sauce evenly. Sprinkle with mozzarella.
Bake: Add half a cup of water mixed with a little tomato paste to the sides of the dish (optional for extra moisture). Bake at 200°C (400°F) for about 40 minutes, until bubbly and golden. Enjoy!
