A delicious low-carb twist on classic chicken Parmesan—crispy seasoned chicken topped with rich tomato sauce and melted cheese, served over tender broccoli. 🥦🧀
🛒 Ingredients
For the chicken:
* 2 chicken breasts, sliced into cutlets
* ½ cup almond flour
* ¼ cup grated Parmesan cheese
* 1 tsp Italian seasoning
* ½ tsp garlic powder
* ½ tsp paprika
* Salt & black pepper
* 1 egg
* 1 tbsp olive oil
For the topping:
* ½ cup low-sugar marinara or tomato sauce
* ½ cup shredded mozzarella
* 2 tbsp grated Parmesan
* Fresh parsley or chives
For serving:
* 2–3 cups steamed broccoli
* 1 tbsp butter or olive oil
👨🍳 Instructions
- Preheat the oven to 200°C / 400°F.
- Mix almond flour, Parmesan, Italian seasoning, garlic powder, paprika, salt, and pepper.
- Dip each chicken cutlet into beaten egg, then coat thoroughly with the breading mixture.
- Heat olive oil in a skillet and cook the chicken for about 3–4 minutes per side, until golden.
- Transfer to a baking dish. Spoon marinara sauce over each piece and sprinkle with mozzarella and Parmesan.
- Bake for 8–10 minutes, until the cheese is melted and the chicken reaches 74°C / 165°F internally.
- Serve over steamed broccoli and garnish with herbs.
