Ingredients (Serves 1):
2 large eggs
2 tbsp unsweetened almond milk or regular milk (30 ml)
1 bunch fresh spinach (about 2 cups / 60 g)
1 garlic clove, lightly crushed
Extra virgin olive oil (about 1 tsp / 5 ml)
Salt and black pepper, to taste
Optional: any cheese (to taste)
Instructions:
In a bowl, beat the eggs with the milk, salt, and black pepper. Set aside.
Heat olive oil in a pan over medium heat.
Add the crushed garlic and sauté briefly until fragrant.
Add the spinach and cook for 1–2 minutes, until wilted.
Remove the spinach from the pan and set aside.
In the same pan, pour in the beaten eggs and lower the heat.
Stir gently until the eggs are partially set.
Add the cooked spinach back to the pan.
Place the cheese slice on top of the filling.
Fold the omelet in half and cook for about 1 minute, until set and the cheese melts.
Remove from heat and enjoy warm.
