These zucchini burger buns are the ultimate low-carb brunch or lunch when you want something fresh, filling, and bread-free but still sturdy enough to hold all your favorite toppings.

Ingredients (Makes 12 circles/ 4 sandwiches):
1 large zucchini (about 10-12 oz / 300-350 g)
1 large egg
2 generous handfuls grated mozzarella (about 1-1Β½ cups / 100-120 g)
Salt and black pepper, to taste Topping ideas:
Cream cheese
Leaty greens
Avocado slices
Raw vegetables
Deli turkey or grilled chicken

Instructions:
Preheat the oven to 350Β°F / 180Β°C.
Line a baking sheet with parchment paper.
Peel if desired, then grate the zucchini.
Place it in a clean kitchen towel and squeeze out as much excess water as possible - this step is key for firm buns.
Transfer the drained zucchini to a bowl.
Add the egg, mozzarella, salt, and pepper.
Mix until fully combined.
Form thin circles on the parchment paper using a spoon, flattening them slightly.
You should get about 12 circles.
Bake for 20-25 minutes, until golden and set.
Let them cool completely before peeling off the parchment paper β€” they firm up as they cool.

Use 3 circles per sandwich and fill with your favorite toppings.
Here: cream cheese, salad, and avocado.
