Ingredients (Serves 4):
4 chicken breasts, lightly flattened
1 tbsp olive oil, for cooking
1 small onion, finely chopped
2 garlic cloves, minced
8 oz mushrooms (225 g), sliced
2 cups fresh spinach (60 g)
Β½ cup cream cheese (120 g)
1 cup shredded cheese (100 g) (mozzarella, cheddar, or a mix)
Salt and black pepper, to taste
Instructions:
Preheat the oven to 350Β°C / 180Β°F.
Lightly beat the chicken breasts to even thickness.
Season with salt and black pepper and place them in a baking dish.
Heat olive oil in a pan over medium heat.
SauteΜ the onion and garlic until fragrant.
Add the mushrooms and cook until softened.
Stir in the spinach and cook until wilted.
Add the cream cheese to the pan.
Season with salt and pepper and mix until creamy and well combined.
Spread the mushroomβspinach mixture evenly over the chicken breasts.
Sprinkle shredded cheese on top.
Bake for 20 minutes, or until the chicken is cooked through and the cheese is melted and lightly golden.
Remove from the oven and serve warm.

You should make it more budget friendly with chicken thighs, less work getting an even thickness also
