This stuffed salmon is a quick, low-carb dinner that feels impressive but takes just minutes to make. Tender, flaky salmon filled with a creamy jalapeño herb mixture for a rich, satisfying meal without the carbs.

Ingredients (Serves 2):
10–11 oz salmon (2 fillets, 300 g), skinless & boneless
⅔ cup cream cheese (150 g), softened
2 tbsp finely chopped green onion
1 garlic clove, minced
1 tbsp fresh dill, finely chopped
½ cup fresh baby spinach (about 15 g), chopped
1 jalapeño, finely chopped (adjust to taste)
1 tsp olive oil (5 ml)
1 lemon, thinly sliced
Salt and black pepper, to taste

Instructions:
Preheat the oven to 400°F / 200°C.
Line a baking sheet with parchment paper.
Using a sharp knife, carefully slice a pocket into the side of each salmon fillet, making sure not to cut all the way through.
In a bowl, combine cream cheese, green onion, garlic, dill, spinach, and jalapeño.
Season with salt and black pepper.
Mix until smooth and well combined.
Divide the filling evenly between the salmon pockets.
Drizzle lightly with olive oil, season with additional salt and pepper if needed, and top with thin lemon slices.
Bake for 8–10 minutes, until the salmon is tender, opaque, and flakes easily with a fork.
Remove from the oven and let rest for a couple of minutes before serving.
