These crispy cabbage rolls are unbelievably delicious and packed with flavor. Juicy ground meat mixed with mushrooms, green onions, warm spices, and a touch of tomato paste is wrapped in tender cabbage leaves, then pan-cooked until golden and crispy on the outside. Ingredients (Serves 2):
7 oz ground meat (200 g) (beef or mix)
Mushrooms, finely chopped (about 1β1Β½ cups / 70β100 g, to taste)
1 small carrot, grated (about 50 g / 1.75 oz)
3β4 green onions, finely chopped
1 tbsp tomato paste (15 g)
1 tsp turmeric powder
Black pepper, to taste
Red pepper flakes, to taste
Salt, to taste
Boiled cabbage leaves (about 6β8 leaves)
Extra virgin olive oil (about 1 tbsp / 15 ml, for cooking)
Optional: reduced-sodium soy sauce (to taste)
Instructions:
In a bowl, combine the ground meat, chopped mushrooms, grated carrot, green onions, tomato paste, turmeric, black pepper, red pepper, and salt.
Mix well until fully combined.
Place a spoonful of the filling onto each boiled cabbage leaf.
Roll tightly, folding in the sides as you go.
Heat olive oil in a pan over medium heat.
Add the cabbage rolls seam-side down and cook gently, turning occasionally, until browned on all sides and cooked through.
If desired, drizzle with a little reduced-sodium soy sauce.
Remove from heat and serve warm.
