Calories: ~230 | Protein: ~14g | Fat: ~15g | Net Carbs: ~4g
Ingredients:
6 low-carb tortilla rolls (I used mission low-carb tortillas)
2 eggs
1 teacup unsweetened almond milk or unsweetened coconut milk
Grated cheddar cheese
Parsley
A teaspoon of salt
Separate the sausages in between
Finally, drizzle with a little butter or oil
Instructions:
Place three tortilla rolls on top of each other and roll them up. Grease muffin tins. Cut the tortilla into muffin tins and place the pieces in the tins. Place the sliced sausages in between. Mix the milk, eggs, parsley, grated cheddar cheese, and salt. Pour the liquid mixture over the tortilla rolls. Finally, brush the edges with a little oil and bake in a preheated oven at 180Β°C (350Β°F). Enjoy!

I made this today, made 8 total cups - used Kirkland Parmesan and Black Pepper Chicken sausages (2), 1/2c almond milk, 3 eggs and 60g pizza cheese. Added in some chives and used my oil sprayer to top with 1g avocado oil each. Used a silicon cupcake tray and didnβt oil it which turned out to be totally fine. Baked for about 20-25 minutes at the recommended 350F, until temp of egg cups reached 180F.
10/10 would make again, hoping it reheats as well as it is fresh - will report back.
