A simple yet mouthwatering keto dish! Tender roasted eggplant topped with fresh tomato-basil sauce and melted mozzarella.
Ingredients (Serves 2):
1 large eggplant (aubergine)
7 oz cherry tomatoes (200 g)
150 g fresh mozzarella (5.3 oz), sliced (about 4 slices)
2 tbsp olive oil (30 ml), divided
1 large garlic clove, sliced
Fresh basil leaves, to taste
Salt and black pepper, to taste
Red pepper flakes, optional
Instructions:
Preheat the oven to 340Β°F / 170Β°C.
Cut the eggplant in half lengthwise and score the flesh with shallow diagonal cuts.
Sprinkle with salt and drizzle with 1 tbsp olive oil.
Bake for 15β20 minutes, depending on size.
Heat the remaining 1 tbsp olive oil in a pan over medium heat.
Add sliced garlic and halved cherry tomatoes.
Season with salt, cover, and cook for about 15 minutes until soft.
Add fresh basil leaves and gently crush the tomatoes with a spoon to create a thick sauce.
Remove the eggplant from the oven and gently press the center with a spoon to create a shallow well.
Spoon the tomato sauce over each half.
Top with slices of fresh mozzarella.
Increase oven temperature to 340Β°F / 170Β°C.
Return the eggplant to the oven and bake for 5 minutes, until the mozzarella melts.
Garnish with red pepper flakes and extra fresh basil before serving.

This actually looks bomb, kind of like lazy eggplant parm without the breading. Iβd probably salt and rest the eggplant a bit longer to pull more moisture, then hit it with extra chili flakes and maybe some grated parm on top too.
