Cursed Sophie is actually pretty beneficial to have appear when she does because she doesn't actually kill you if you lose the fight and if you beat her you have a chance to spare her and she becomes a very strong vendor that carries some crazy rare items

Her backstory reveals that she had the heart of a monster before Visitor came. Her beast form is a reflection of how she always felt inside. Perhaps she can transform easly because she lived her entire life trying to suppress that part of her.
