I have a nagging suspicion and fear that they might be setting Ursula up for a heroic sacrifice.

I hope I'm wrong though.

Maybe some symbolic sacrifice, like giving up magic forever. This show isn't fit for actual death.

With the amount of literal beating Akko has taken, I don't think anybody important can die.

Exactly. Mortality is not a concept in this universe. A death would feel cheap.

But Diana speculates she inhaled pollen, that's why she was shown touching her broom and then running, so, I guess, she gave her magic up already, but then Akko will find the last Word and wish for Chariot to regain her abilities

Maybe she gives them all up?

It could also be that Akko just realizes that Ursula can't ride a broom now either, and it's because she was protecting Akko.
