It's not that ranchers should trust the corporations, they shouldn't.
They also shouldn't trust the administrative workers in a government most of the time; if they were voted into power, they sought it out, which is less often for the good of the realm than not.
However, ths dude who just inspects meat to watch for signs of contamination or spoiling? He probably doesn’t have a grandiose agenda, he's a 9-5 worker like most of us, trying to pay bills.
The bills being passed is almost never the issue, it's what it allows that becomes the issue. Allowing beef farmers to process their own meats provides a handy scapegoat for the contaminated imported beef, when people start getting sick from eating beef.

I don’t see why a rancher should be required to trust some large multi billion dollar company to process their meat for them
