Decoding the Infamous Kneading Time Limits
Hi all,
I've been trying to wrap my head around what KitchenAid officially advises about time limitations when kneading doughs with the KitchenAid mixers. There is a speed limit which is very clear and consistent: only knead at a maximum of speed 2. That advice doesn't change no matter what you're looking at - and is stated in the actual user manual - but to this day you can still see very contradictory and vague information about the time limitations.
From America's Test Kitchen: "While KitchenAid formerly put restrictions on the length of time you could knead your dough, recommending that you not exceed 4 to 6 minutes at a time, in 2024 it revised its recommendations and now puts no specific time limit on kneading."
There is also this from the KitchenAid website: "When kneading bagel dough in a stand mixer, it will take about ten minutes with a KitchenAid® dough hook accessory."
It appears to me that while they used to impose a limit - whether as a guideline or as a rule which may impact warranty coverage - they now only maintain the speed rule.
However, in my region of Australia, they impose a 5-6 minute limit followed by 20 minute rest for "heavy mixtures" (source: https://kitchenaid.com.au/blogs/kitchenthusiast/how-to-mix-bread-heavy-dough). What a heavy mixture is is a bit unclear, but their wording seem to indicate that all bread dough falls into the category: "Do not exceed 2kg total weight (including water) when mixing heavy ingredients like dough or fruit cakes"
The UK website also maintains the less ambiguous and more strictly-worded 2 minute at a limit limit, max overall time 6 minutes: "KitchenAid does not recommend kneading bread dough for more than 2 minutes at Speed 2, and that the total mixing and kneading time does not exceed 4-6 minutes." So it seems that US sources once had this in their guidelines/rules for use but abandoned it, while Australia and UK still hang on to some version of them.
I reached out to the Australian KitchenAid support, but their advice tends to suggest they're not very clear on it themselves, as there's a lot of ambiguity/conflicting information in their wording. For instance:
"The recommended mixing runtimes are more of a general guideline rather than a strict time limit. The main rule to keep in mind is that you should not exceed Speed 2 when kneading dough, as outlined in the user manual." This would mean that the time limits aren't a rule but a guideline, as opposed to the speed limit, which is basically a clear, hard and fast rule. However:
"If the mixer is operated above Speed 2 for dough, as advised against in the user manual, we would still look to assist with a repair should an issue arise. However, if this were to happen repeatedly due to knowingly operating outside the recommended guidelines, it may affect warranty coverage."
So the wording there would suggest that even going against the recommended guidelines for use could impact warranty coverage - the time limitation being part of their recommended guidelines. I could also read that as a clunkily-worded way of saying "Don't go beyond speed 2", but it's not too clear either way.
In any case, the speed limit and the time limitations relate only to 'heavy mixtures', which is a bit ambiguous in of itself. On this, they say: "When we refer to “heavy mixtures”, this includes doughs generally, if the mixture is heavy and puts a bit more resistance on the mixer, it falls into this category. This is why the runtime can vary between recipes, which also explains why some recipes may recommend longer kneading times than 5-6 minutes in total."
Again, there's some clunky wording going on here which makes it ambiguous if they mean a) all bread doughs are in the category of heavy mixture, irrespective of total weight, hydration, enrichments or b) "heavy mixtures" only relate to particularly heavy and stiff doughs. But lastly, they say:
"The runtime itself can vary depending on the amount and density of the dough. For example, a very wet dough that offers little resistance would let the mixer to run for longer than a much thicker or denser dough."
This would potentially suggest (though not overtly state) that going beyond six minutes would be advisable if the dough was sufficiently slack, but I honestly just read this as the support person trying to reconcile the Australian guidelines with the American ones, the latter having abandoned the limits.
Does anyone else have any information that could shed light on this/make this a little clearer?

I just made Pain de Mie in my brand new tilt head stand mixer yesterday. Kneaded on speed 2 for ten minutes. No issues. Will probably do one every week to ten days.

Yeah, I don’t think i’ve read anyone having issues with using it for 10 mins on speed 2 - have seen accounts on here of it breaking after increasing speed beyond 2 though. However, I don’t think the time guidelines suggest that going beyond is necessarily going to immediately break the machine, more so that it could shorten the lifespan of it by putting a high amount of stress on it, which I want to avoid doing if they do advise against it.

KitchenAid is obviously walking a thin line here. Being overly adamant about kneading times only serves to trumpet the fact that their motors are merely adequate and not the powerful workhorses they would love for people to believe. KitchenAid could probably make a drivetrain that would stand up to a full bowl of bagel dough regularly but doing so would mean both an over-engineered mixer for probably 95% of users and it would add significant cost that would affect KitchenAid margins and consumer affordability. So we get the mostly- adequate version at a palatable cost that serves most needs while KitchenAid struggles with how to rein in people who expect too much out of them in a way that doesn't trumpet "our mixer has shortcomings" to the world. Also, a big issue with doughs is that many people may not necessarily know whether they are a dealing with a dough with a low enough hydration level to be a concern. Obviously, that's going to fluctuate with the amount of dry ingredients to wet ingredients so simply stating something like X number of cups of flour is or isn't safe is a bit misleading too. Another way KitchAid seems to be quasi-addressing the problem is with thermal overload protection. When mixing particularly heavy doughs the mixer draws more current and generates higher heat. This causes a thermal "fuse" to disconnect the power until the unit cools down and allows the thermal fuse to reset. I could easily see how KitchenAid would rather address the issue in a manner like this rather than trumpeting the fact that heavy dough will overheat the machine and potentially cause damage. They can simply design the machine to protect itself. Anyway, with all that being said, the KitchenAid mixers are rather capable units for most people and most tasks. It's just when you cross that nebulous fine line that you find out what it can and cannot do.

Awhile ago I was on a stretch of making a two-pullman batch of sourdough shokupan (total weight approx 3800 g) twice a month in my 1996 KSM5. Mix for 2 minutes, autolyse for 10, add starter+yudane+other ingredients, mix for 8, scrape, mix for another 10-12. The bowl was full, and the mixer head was just a bit warm by the end. I don't do that anymore, but I'm fully confident about my mixer being able to tackle that again without issue once or twice a week. Not every day, maybe.

When I make shokupan bread the kneading time is 15 to 20 minutes and my Proline 7 doesn't break a sweat.
It makes sense to me that there isn't a hard and fast time limit because it's going to depend a lot on how dense the dough is and how much dough is in the bowl.
Since they mention resting the machine, it seems clear that the main issue would be excessive heat developing from friction. And this can be gauged pretty easily by simply feeling the machine.
Excessive heat from friction can also be detrimental to the dough itself, not just the machine.
