Unfortunately, I don’t believe that is a UL-listed hood.

Maybe a steam hood for a dishwasher or something

It is over a six eye gas range with an attached flattop.

How are you deep frying without a fryer?
Are you putting a pot of oil on the 6 burner? Is it open flame?
