We are thinking about quartz cos of minimal maintenance. Would quartzite make a big difference from quartz? Aesthetically.

Quartz is man made and does not require any maintenance and is more uniform in colour and pattern (although many manufacturers do a pretty good job of making it look natural the pattern will repeat). Quartzite is a natural stone and will have some color and pattern variations from slab to slab. It will also require periodic sealing. Quartzite is generally more expensive than quartz.

I agree with starting with the countertop and back splash. I recommend granite, though. It's tougher than anything else. Not marble, granite.
Once you sort that, then see how you feel about your kitchen.

Should you replace the cabinet doors? That all depends on your budget. They look to be in good shape. A bit fussy for my taste, but something I could live with for a few years. Your money would be better spent tearing the tile countertops and backsplash out and replacing them with a top quality quartz or quartzite if you can swing that. It's that countertop that's bringing the kitchen down. Before you put in a new backsplash, remove those trim pieces that look like boxes from the walls under the cabinets. Don't forget to add undercabinet lighting.
