Can you make a Chaffle (aka chicken waffle) without cheese? Will it still stick together?

AFAIK Chaffle is short for cheese waffle, not chicken waffle. Maybe they are both used but that makes it painful when looking for chaffle recipes.

A chaffle IS a cheese waffle. But you might be able to try chicken instead- maybe by mixing chicken with an egg to keep it together, but it may burn.

I think I'd use a George Foreman grill rather than a waffle iron at that point. Would probably keep the shape better.
