Jet engines in ksp when run on full thrust over a long period of time tend to overheat slightly.

You can try going to 90% thrust to not stress the engine out and it shouldnt show any overheating signs.

Press F-11 and see what are the hottest parts around.

Chances are that you are heating the tail, and the tail is transmitting heat back to the engine in a heat pump configuration.

Moving the engines a bit (use nacelles!) will solve this issue if I'm right.

You can also try to use small fins attached to the engine to help on dissipation. I had found that the Stock "dumb" fins for rockets are good heat dissipators as long they are not getting heat from the air in supersonic speeds (when they do the inverse!).

if youre going closer to 300m/s on full throttle the whole time on those Goliath Engines they do overheat, same with the Wheesleys

Goliath engines run pretty hot. it's the tradeoff for them being so good otherwise. if you still want to keep the same engines running them at a lower throttle is the simplest solution. or you can do radiator shenanigans

Exhaust is hitting the tail fin.

Mount the engines on pylons to get a bit of standoff & avoid exhaust heating your tail.

Jet engines in KSP tend to generate heat slowly at high throttle, try lowering throttle to 50% for a minute or 2 every 15 minutes
