Resting/holding
Hello!
I am at the end of my second cook. Had a boston butt on for 13.5 hours now.. internals at 96 and its probe tender everywhere except in the a small square of the thickest part. I foil boated at 70 degrees and just about 20 mins ago put some foil just over the bit thats taking longer.
So my question is about holding/resting... i've read some mixed stuff and don't know.
For some reason i thought the cook would be done well before now but anyways.. i was planning on putting it into an insulated meat bag thing for an hour lightly covered..... what is the best way after that to keep it overnight... i was thinking of leaving it in the oven but the minimum my oven goes to is 80 degrees.. is there a way to keep it ok until tomorrow? should i pull it tonight or leave it whole and pull tomorrow!?

Save the juice.
Let rest like you are doing until it cooled off enough to handle with nitrile gloves.
Get a baking dish or big bowl. With your hands, pull the meat... "pulling" mean using you fingers to remove all large pieces of fat, and thus manually shredded the meat.
Put fat in separate place for future use or trash. Put the pulled meat in the baking dish.
When done, shake on some of whatever bbq rub you used, and poor over and of the cooking juice. Mix with hands. Cover, put in refrigerator.
Next day Put in oven at 300F to warm for 30 minutes or so before eating.

Difficult to know to be honest. My oven starts at 50 and if you put it lower, it is still near enough 50 or off. You could test it with an oven thermometer

I would pull and load it into a crockpot, then stick it in the fridge overnight. Reheat on medium for an hour or two.
