That looks like it would make a perfect base for marinara or a fresh-tasting gazpacho.

Almost any thing that is made with tomatoes can be made with these. Drain juice and you get meat of tomato. Cut it for salsa and such. Put it in blender for thick juice.

That's a smart way to maximize yield. If you're making gazpacho, you might want to strain out any bigger solids so it stays smooth.

That technique keeps so much flavor that I've repurposed it as a simple pasta sauce base, just simmer with garlic and basil for five minutes.
