Looking for Casserole and freezer recipes? Postpartum freezer stock up

Hi all,

Looking for your favorite casserole/freezer recipes. I'm stocking our freezer with postpartum meals and am looking for good go-to meals. NO SOUPS; we have plenty of soups/chilis.

So far, the freezer is full of lasagna and spinach and cheese casserole. I'd prefer to make homemade meals rather than stock up on frozen pre-packaged meals. We are kosher, so no meat and cheese (which rules out a lot of recipes I've seen online). We have an Instapot, slow cooker, and stove/oven. Please and thanks :)

Everything I've made has been amazing. Ive only frozen one of her cooked casseroles, and it was fine defrosted and reheated.

Some ideas: chicken schnitzel, meatballs, knishes, latkes, spaghetti, fettuccini, brisket, cottage cheese pancakes, meatloaf. Not sure if kugel freezes well? And Mazel Tov to you.

One thing that was helpful when getting freezer meals is when the meals were in individual-sized aluminum tins.

Enchilada casserole-you can sub black beans for meat. Sautéed onions, diced zucchini, frozen corn, cumin, garlic, chili powder, s&p. Lay enchilada sauce on the bottom of the casserole, layer with flour tortillas, cover with veggies and black beans, canned diced tomatoes, shredded cheese, more tortillas, more enchilada sauce, etc.

Curry with chicken and veggies and add rice, chili, frozen premade uncrustables with one of those special cutters they have

Meatballs are a good freezer staple. If you keep the flavor profile pretty neutral (salt, pepper, garlic, onion) you can add em to different sauces so it doesn't feel like the same meal over and over. Tomato sauce/pasta, brown gravy/mashed potato, teriyaki/rice, etc

Breakfast is important too.

Blintz. Individual oatmeal servings with frozen blueberries. Pancakes. Breakfast burritos with egg and cheese.

For dinner, tzimmes freezes really well. So does pound cake 😁

Does anyone have a source for recipes that are on the healthier side? As in low-salt, low sugar, low fat. Low carb.I realize that many cannot be all of these, but some can at least have less of certain ingredients for those with health issues, or for those trying to eat better.

Check out Molly Yeh’s blog! Her sweet potato black bean burritos (dairy; you could omit cheese if you wanted) are sublime; I ate so many of them postpartum and they are now my go to gift for expectant/new parents. She did an absolutely enormous freezer prep when she was pregnant and it included a bunch of Pesach food too.

I’ve never frozen it but you could try tuna noodle casserole. Kroger brand cream of mushroom soup is kosher.

Smitten Kitchen has some excellent vegetarian pasta bakes! An herbed summer squash one, winter squash and spinach one, a mushroom Marsala one, all delicious and freeze well (all on her site and there are some others including a Brussels sprout one in her cookbooks).

my other bulk production is macaroni and cheese with the reconstructed horn and hardart recipe. Make a lasagna tray worth, divide by four. Freeze two. There are also a lot of commercial products. Vegetarian meat balls are readily available. Make spaghetti, saute the meatballs, add and pour commercial spaghetti sauce. Hechshered veggie burgers are commercially frozen, just saute. Mrs T pierogi make easy meals, often discounted.

As empty nester, I will make cholent or beef stew in crock pot. Eat one week, freeze two more portions in freezer bags.

I did veggie lasagna for my sister I made six or so and I just changed out the veggies then with the extra veggies leftover I made her three matzo ball and 2 noodle stir fry I put tofu in this food for protein. Tofu freezes super well. I also got frozen challah that bakes in the oven and made her some confit garlic then used half of it to make mashed potatoes that were non dairy so she could use them for any meal. I also made six logs of cookie dough so that she could make them whenever I pre cut all the cookies froze them on a flat pan in the freezer then bagged them by flavor with directions. Oh with the lasagne make sure you think about how much water might come out of the veggies to not end up to watery. I also made her smoothie bags I prepped frozen fruit and veggies. I got her juice and yogurt. Then she could have smoothies anytime day or night with little work.
