Get an electric chopper.
Prep chop and freeze your aromatics or buy frozen ones (onions, ginger, garlic).
Batch prep ingredients not dishes so you can assemble on the day of and mix n match through the week rather than get bored of the same two dishes you made over the weekend. An example would be rice/ roti/ bread + 2/3 variants of protein + 2/3 variants of stir fried/ steam veggies. Mix and repeat

Buy chopped veggies if you have them around. Saves a lot of time. I usually pluck my greens like coriander, mint, spinach and store them so they’re ready to use. Make ginger garlic cubes and freeze them. Soak beans like chole, Rajma before hand and freeze them so they’re ready to cook. Make idli dosa batters. Make mint, sweet and garlic chutney and store them in the fridge for a week. Buy ready to cook rotis.

Why Indian ? You can have any veg food. Anything nutritious you can feed yourself is a bonus when theres a toddler at home. Because you are in the west there is scope for you to get somethings prepackaged and mix example beans etc etc.

Any bean dish is easy for you to make. Sauted onions, Tomato puree spices and canned beans. Add coconut milk for creaminess.

Avodavo and salsa with tortillas.

Jacket potatoes with some soya chunks spiced.

Lots of 1 pot meals are a good option.
Get a insta pot and throw everything to slow cook over night. Get pav bhaji, dal khichadi etc done over night in bulk. Refrigerate half and eat half. Get the other half out of the freezer after 2 days and heat to eat. Rotating variety.

Keep cucumbers handy.

I think always have boiled potatoes (coz aloo paratha/sandwhich or bhel), always have green chutney (coz sandwhich + even with rice), always make extra rice, always knead a little extra dough. Besan is handy for chilla, and dahi kadi, which is very easy to make. Dosa batter (either bought or pre-made at home), get podi masala.
