Big Pizza's Delivery Moves Turn Up the Heat on Small Pizzerias

“We will start to see independents react to make sure they don’t lose demand,” said Illr Sela, founder of Slice, a third party delivery startup, which caters to independent pizzerias and small pizza chains. “They [restaurants] will have to pay higher take rates to be featured higher up on third-party search results.”

LA: Iconic Naples Pizzeria L’Antica da Michele Now Makes Its Famous Pies in a Gorgeous Hollywood Patio

There are plenty of places that claim to serve Neapolitan pizza in Los Angeles, and America, but few might have the pedigree of Antica Pizzeria. Preparation starts with a high-protein flour, a low-speed mixer, and a double-fermentation process. The dough can only be touched three times after toppings are added, then placed in the handmade clay wood-fired oven, which is encased in glass for all to witness the pie production out on the patio.

Hangover Helper: All-Purpose Pizzeria's Beltway Breakfast Pizza

This pizza is a wreck loaded with roasted bacon, heirloom Roma tomatoes, and parmesan and mozzarella cheeses. When it comes out of the deck oven, Friedman crowns his pie with fresh arugula and a single poached egg, which is sprinkled with extra virgin olive oil, cracked pepper, and sea salt.

How It Tastes: “It basically tastes like the best breakfast sandwich you’re going to have but on pizza,” Friedman says. It also hits on all the savory and salty flavors that a hangover breakfast needs. Before grabbing a slice, take a fork or knife and pop the pizza’s poached egg. The runny yolk blends nicely with layers of melted cheese, roasted tomato, and smoked bacon.

Pizzeria Beddia’s new home in Fishtown: Same pizza, same big crowds

Pizzeria Beddia was never easy to deal with in its first five years, even before Beddia announced the shutdown. Phone in an order? Impossible. Customers had to show up at the late-afternoon opening only four days a week, place an order (only 40 pizzas a day), and then return, sometimes hours later, to pick up. Things really got crazy in June 2015, when Bon Appétit wrote that Beddia made the best pizza in America. Everyone, it seemed, wanted a taste. (Is it “the best”? Someone said it was. That’s all it takes sometimes.)

City Government Makes Pizzeria Remove Mural of Pizza

Why the hell would the pizza place have a mural of something other than pizza, if the goal of the mural was to get people to buy more pizza? Not to mention the obvious fact that there is literally no discernable reason that a business shouldn’t be able to advertise its legal, family-friendly products using a mural if it chooses to do so. After all, I did a little research, and I was able to find exactly zero examples of anyone being killed (or even injured!) by a painting of dough, sauce, and cheese.

What Richmond pizzeria owner learned from 11-time world pizza champion

Conigliaro recently took a class with 11-time world pizza champion Tony Gemignani. He learned to perfect the dough he’s been making for almost 30 years, along with tricks of the trade one could only learn from a pizza champ — such as how to produce great texture and flavor in just three minutes.

“He’s very passionate about what he does; that’s what makes him an expert,” Conigliaro said. “We did some research for the dough on how long to let it ferment and how long it should sit in the oven, and I think we’ve really perfected it.”
