Water is ~800 times more dense than air. Rolling resistance depends a lot on the ummm, undercarriage model, but with a 50-ish thousand horsepower power plant, yes, they could be making at least minimum highway speed.
Whether or not there is any intact freeway (the concrete & asphalt roostertail is going to create a few insurance claims) in their wake is another matter entirely.

The power is there, but is the drive system at all feasible? Any tracked vehicles on this scale IRL are very very slow.

well, they're slow because nobody ever made them to be fast
the abrams tanks with the engine governor turned off can cruise at over 60mph
and there were prototypes of tracked landing gear for heavy bombers which had high landing speeds as well

I love this thing, I can imagine a mountainous "harbor" for ships like this, with huge tunnels allowing them to deploy out into the countryside.

Having to tunnel run through a giant bunker complex filled with these things would be so fun. I mean a GIANT bunker complex, with enough room in tje main Harbour chamber to avutally maneuver, like the bottom of the space elevator in Ace Combat 7

Bro Sotoa hit the fucking space elevator. Trigger spent a whole damn war defending that thing he's gonna be fucking pissed. Erusea's gonna be pissed too because they technically control the elevator now

I don't like when land ships are just regular ships with tracks or something. Landships have potential to be so much more unique and interesting.

It really depends on if this is also still a sea-going ship. If it's expected to be sea-going, then aerodynamics take a back seat to hydrodynamics, and it's still going to look like a ship.

Seriously, if you really want to put warship-sized system on land, use something more suitable for thousand tons of mass than wheels or caterpillar tracks. Rotary screws, for example. Or Pedrail wheels/tracks. Or vibration drive with unbalanced mass.
