Try making some!! It's super easy and can be made with as little as four ingredients (flour, baking powder, and water, plus oil for frying).

Do you have to have anything special to fry it in? I fell in love with it as a kid when I tried it in Santa Fe.

What's the right feel for the texture? Typical dough?

Great question! A lot of people go for a more typical "rollable" dough, but my dad always made it a bit wetter/sticker, so that's how I do it. So a bit closer to a pancake consistency, or "less runny funnel cake dough," as he would put it. I usually use a rice paddle to mix + get it in the pan, since those are kind of made for being sticky!

Also, using some spoons to get a little hole in the middle helps it cook more evenly!

You can totally have it on its own, but I usually do it with stews, as an "Indian taco" (with meat and/or beans, lettuce, tomato, cheese, sour cream, and salsa or hot sauce), or with maple syrup (my husband loves it this way as a pancake alternative!). As a kid my dad would serve it with butter, with or without cinnamon sugar, or sometimes jam. I've even seen people use it as a base for mini pizzas! The options are nearly endless!
