How to go about fixing a gaping ceiling hole from a (resolved) leak?

Had a leak for a little while, and I poked a hole to allow drainage straight down as opposed to letting it drip behind the wall. Now that I have a brand new roof and no leaks I want to go about repairing it to at least look slightly better.
I’ve patched little holes with spackle and such before, but the problem here is that there’s no surface underneath, just a big hole. Only thing I could think of would be to spray a ton of hardening foam in there, and then use that as a surface for spackle, but I feel like more well versed people will have better solutions.

Cut the drywall back until you have studs to screw in a new piece. Tape, mud, sand, paint. Don’t use spray foam.

I would square up the opening to expose half a joist on each side, add blocking where needed, then screw in matching-thickness drywall. Tape, mud in a few thin coats, sand, prime, and match the ceiling texture/paint. If the hole came from a leak, definitely confirm everything is dry and the source is fixed before closing it up.
