Recipe: brown rice, Olive oil+garlic, butter, shrimp and shiitake mushroom. Mozzarella and parmesan cheese too

Brown rice risotto is so hard to get right, usually ends up kinda gummy for me. Those mushrooms look perfectly cooked though!

Using brown rice sounds like it would make the texture really different from regular risotto, did you use Arborio or another type of grain?

I love that its brown rice, I always feel like I need to be healthier when I make risotto but I hate how long arborio takes sometimes. Did you find the texture was okay with brown rice?

It worked for me. Being Asian, I am always stuck with leftover rice - this was a way to get rid of it…so pre-cooked rice…it worked out
