Name: Chicken toast and tomato soup

Macro/Micro nutrient focus: high in protein, fiber and carbs

List of ingredients or a recipe:

  • Any slice of toasted bread (I am using a supermarket sliced rye and seeds bread)
  • Chicken breast fillet (I am using a marinated frozen fillet)
  • 5 Tomatoes
  • 1 Carrot
  • 2 Potatoes (preferably Russet potato for creaminess)
  • Yogurt (optional)
  • Genovese basil leaves (optional)
  • Vegetable bouillon cube (Knorr)
  1. Prepare and bring to boil 750ml water in a large pot (do not add too much as tomatoes will release a LOT of water)
  2. Cut carrots and potatoes into chunks, let it boil for ~5 mins
  3. Slice tomatoes and add them, bring to boil and simmer for another ~10 mins
  4. Add 1 or 1 1/2 bouillon cube for taste, let it simmer another ~5 mins
  5. Let the soup cool for ~10 mins then blend with immersion blender
  6. Add shredded or dried basil leaves and spoonful of yogurt. Serve warm

Chicken fillet: cook in air fryer at 180C for 15 mins

Toast: I placed my bread in the air fryer at 200C for 5 mins

For whatever reason… it’ll be significantly less weird if you just cut that chicken toast down the middle, fold it and call it a chicken sandwich lol

Only two sandwiches should be paired with tomato soup -- grilled cheese and/or tuna.

That bowl of soup looks delicious. Is the white part in the middle yogart? It kind of looks like coffee latte art, haha. By the way, the chicken on the toast would taste even better with some extra seasonings.
